A lotof unripe peaches are removed from branches before peaches matures. We call it `tekika'. This is necessaryin order to improve quality of the peach for commercial purposes. However the removedunripe peach is thrown away without being used as it is not fit for consumption. It is necessary tothink about the usage of`tekika' peach. This is so in order to preserve food notwithstanding the activationof the farmhouse.In this study, we have developed two kinds of processed foods using`tekika' peach. `jam'and`miso'. We performed the sensory test about`jam'and`miso' and examined its palatableness. Theevaluation of the miso was almost good.
